I made the shield from some very thin sheet carbon fiber I had left from another project. 

Rytek makes three different upper brackets he sells separately. Allows you to raise and lower without drilling more holes. You should be good with just the added length of the slots on the new bracket.

I have mine set where the seam is even with the bottom of the boat chime. 

As low as you and the boat will tolerate, meaning is it throwing water all over the place, is it acting like a small trim tab, is it giving good readings at speed, you know its all a compromise.
