me and a buddy put this smokehouse together from an old fridge he scored. wanting to try smoking mullet. anyone know how to prep em for smoking?

 thanks, i found the same article and a couple more that are about the same. i'm going to try it when i can catch some at the jetties. i'm being told to get them from a clean sand bottom, not mud. i'll post up when i do it, probably be in the spring or summer when those big rafts of mullet are hanging around out there.
